Cranberry Cake
My mom used to make this every year for the holidays. We grew up calling it "Cranberry Bread" but to be clear, this is CAKE. And delicious! I've altered her original to make it vegan-friendly. May it add some yum to your Thanksgiving.
Cranberry Cake (vegan)
2 c unbleached white wheat flour
1 c organic sugar
1.5 tsp baking powder
1 tsp salt
1/2 c vegetable oil
3/4 c orange juice, grapefruit juice, or water
1 TBPS orange, lemon, or grapefruit zest (1 orange worth)
1/2 c chopped walnuts (optional)
Mix all wet and dry ingredients separately, then stir to combine. The batter will be thick, but the cranberries will release moisture as it cooks. Press batter evenly into an oiled or parchment-lined loaf pan. Bake in a preheated 350* oven for 50-55 minutes, until a toothpick stuck into it comes out clean of batter. Allow to cool before slicing.
